LE SOMAIL

SAINT-GILLES

MEILHAN

Perched on a mound, the village of Meilhan is a picturesque site. This nautical stopover is a small shady basin located at the bottom of the hillock. From the village, you can see the river Garonne and the canal running parallel. Its small shops, restaurants and its pleasant setting place, make Meilhan a very nice port-of-call.

SALLÈLES D'AUDE

LA SAGNE

In addition to the salt production and rice growing, the inhabitants of Camargue harvest " La sagne " (reed), in the swamps of " Charnier " near Gallician. Called also " thatch ", it is used as roofing material for Camarguese houses but also for those in Normandy, England and Holland.

LA ROUILLE SÉTOISE

When the pieces are brown, add finely chopped garlic and onion and cook until golden too. Add thyme, laurel, tomato paste, and white wine to cover ¾ and ¼ with water. Let it simmer for a while. Then, for taste and colour, sprinkle with saffron. Just before serving, some "aïoli" (a mayonnaise with garlic) into the sauce. Now, you only need to set the table and on board, enjoy this sun-filled dish with potatoes or rice.
