LE CANAL DE LA ROBINE ET LE CANAL DE JONCTION
When it was a Gallo-Roman capital, Narbonne was already linked to the sea by the river Robine. During the XVII th century, the water way was modified so as to connect Narbonne to the river Aude. In 1776, because of the growing economic importance of the " Canal du midi ", it was decided to dig a junction between the two canals. Immerse yourself in the genuine Roman atmosphere of Narbonne, enjoy an escape back in time at Sallèles d'aude, and finally reach the sea at Port la nouvelle.

After the Tunnel at Malpas, Riquet had to be bold once again. As it reaches Béziers, the canal runs above the river Orb. The barges had to be able to drop in level. Castets-En-dorthe is a pleasant village, situated just at the entrance of the Canal des Deux Mers. From its castle, proudly encamped at the junction of the river Garonne and the canal, therei is an amagnificant view. The buildings date back to the VIIth century, were erected on the foundations of a fortified town built in 1314 by Guillaume de Goth, nephew of Pope Clement IV. Henry the Fourth lived there in 1585. East of the village, in the hamlet of Marzerac a roman church with an original steeple stands on the foundation of a gallo roman villa.

Its a dish of simmered white beans and meats. You can choose among three varieties of cassoulets. In Castelnaudary, cassoulet is made with pork : ham, shin, sausage, crackling and of course " confit ". In Carcassonne, cassoulet calls for a leg of mutton and partridge when in season, and in Toulouse, brisket, neck of mutton, " confit " and the famous local sausage. To cook a great cassoulet, you must prepare mund beans in a "cassole" (a varnished earthen pan), and cook it on low heat for at least one hour so that a golden crust forms on the top. Recommended wines : Madiran or Cahors.

CARCASSONNE
Between "Corbières" and the "Black Mountain", stands the most extraordinary XIIIth century medieval town.
