LES JOUTES OU LES CHEVALIERS DU CANAL

Here is a naval tradition anchored in the cultural heritage on Languedoc . Take two gondola-type boats, heading toward one another and propeled by 10 oarsmen each. Add to each team, the blue on and the red one, a jouster a player armed with a spear, standing on the " tintaine " (the elevated back portion of the boat), protect him with a heavy shield. When the two boats cross each other the result is a wet jouster, pushed into the canal by his opponent. No doubt you will find a striking resemblance with the knightly fights of yesteryear. Find your way through the crowd and enjoy the "jouster tournaments in Sète, Palavas or Grau du roi.

GRAU DU ROI

This small fishing port is both typical and charming. Stroll along its piers between the fishing boats and amist the restaurant patios or on the seaside, on the beach. At the Palais de la Mer (the Palace of the Sea) you can see a great variety of Mediterranean fish, especially sharks, the fishing world and an exhibition of deep-sea treasures and boats. LE GIGOT DE MER À LA PALAVASIENNE

Put a drop of olive oil, a dash of salt and pepper, in a stew-pan a bouquet garni ; prepare a ratatouille with 2 egg-plants, 2 courgettes, 2 diced tomatoes, 3 finely sliced onions. Let it simmer for a while. Prick the Turbot with some garlic, coat it lightly with flour and cook until golden brown. Take out the fish. In the cooking oil brown a mashed garlic clove, another finely sliced onion, some rosemary, thyme and add a small glass of dry white wine. Put the fish back in its stew pan and bake for 45 minutes at a low temperature.
